It's ultimately gonna be the unstoppable force versus the immovable object. Neither have really ever shown their full power, but Gori-Sen's power ranges from 5 billion to immeasurable, he's broken through dimensions, and literally was undamaged by the natural end of his lifespan via grim reaper. However, he basically never kills sentient humanoids and isn't conscious of his own power. Given their personalities, it's inevitable that the fight would end in both of them going home. Neither would attack an innocent man, and Gori-Sen would never give Saitama a fight for his life. Plus you have all that mess with Gag Character powerscaling, where Gag characters are really hard to introduce into a feat-based power scaling system...

I've spent way to much time around powerscalers. Long story short, Gori couldn't be killed by his natural lifespan and he un-isekai'd himself. I think he's functionally unbeatable by anything other than the cancellation of this manga (And I wouldn't put money on that beating him either).
