Elf Mead is the special alcohol that the Elf Village used as it's primary trade product.

As for why it was unlocked for MC to make. It's because his power is based on his imagination and existing knowledge.
If he had consumed something or has some basic understanding of something, he can reproduce them, as far as bare minimum materials are available.

Plus, he still regularly meets new people of other races who are apprehensive about seeing a Human. So, to avoid any potential issues, he just wears the collar as an accessory (it's not that the collar works on him, as he can remove it anytime he wants).

As for purchasing slaves, there is none of that in this series. But he does end up hiring girls who have no place to go as helpers later on in the series who do end-up in a relationship with him (some can say this as a form of slavery as well).
