Realistically, poorer villages (esp. ones with infrequent access to meat) would probably not have many of your traditional seasonings, including salt, and especially pepper - not to mention that certain techniques for reducing their gaminess (bear and monkey can be particularly pungent, IIRC) wouldn't be available without specific ingredients, like herbs or spices. Heck, even if they did have some on hand, they'd have to marinate the bear meat for some time in order to get rid of the smell, which they didn't really have time for
