Why? Why do isekai stories keep doing this? It completely ruins the whole story for me.

The problem is that

IIRC, Japan never really had a massive revolution/civil rights conflict over the matter, they just stopped when everyone else did to keep their trade going more smoothly. So to them slavery is whatever, they just happen to not really do it outside of the office. A reminder that Japan is actually super racist and conservative, they're just really good at hiding it.

Also arnt the lowest levels usually the most difficult? Surly things should only get easier acending....

Difficulty is subjective, stronger monsters come out the lower you go, but the higher up floors tend to be a lot bigger, with a lot of monsters scattered around. Imagine the dungeon being shaped like your comment, with big bosses at the emojis, and just imagine that sort of format repeated for a hundred floors.
