They wanted to change things, in the WN the fight was big but quick, MC new the land god power was very high and so used a fast but incredibly powerful strike as a long one would have been risky even for himself, even more with his old body limits.
I don't remember getting injured at all, but is similar to the fight against the angel, the manag massivel lowered his output.

The manga even skips a bit on the most important explanation, the land god lvoed people and was corrupted over time, that is true, so his followers tried to use sacrifices to calm his evil side (that is not his true form, both are), the thing he most hated was how the sacrifices did actually help with the corruption, unlike other stories it wasn't a useless tradition but did help both sides in gaining time.

My only problem with it was
when we later get to see more gods from JP pantheon, they simply let him do, they weren't evil but decided to not do anything when he was getting corrupted.

IIRC the reason they let it happen was because Mizuchi pretty much brought it upon himself. He loved his people too much and used his divine power to prevent many natural disasters, which wasn't something a god should do (and he knew it very well). If he can't stop himself from doing that, no amount of assistance will do him any good.

Why is MC playing around? The involved victims already testified that this deity is evil now.

See, this is why it's important to take a break every now and then! You can't be expected to work all the time, look at what all that pent-up stress did to you! Maybe ask someone to bring a tv into your cave so you can enjoy the world cup.

But, if he was originally kind and got corrupted, doesn't that mean the kind version is his true form, not this evil version?
I probably just shouldn't think too hard about it, huh.

Manga always follows the LN not WN. This series manga still follows the story of the Light Novel. If WN is the original story of the author and the draft of the initial plot of the LN, then LN is the story of the author that has been tweaked by the editor in a way where it is publish-able by the studio that wants to adapt the WN.
So it can't be helped if there is differences between manga and WN.

Indeed, is a pity that in almost every WN to LN work I've seen the changes are pretty bad and uneeded and feel like the editor pushed for them to justify getting paid, as in some cases the WN is already perfect and doesn't need changes.
