There have been a few around. Even the famous Goblin Slayer uses the system, to the point of making dice references. However, so much fantasy manga these days is isekai, which benefits more from copying the system from some ethereal, nonexistent, imaginary PC/console RPG games, which the author can then design to have whatever kind of details the haphazard story happens to require. Alas, a GUI, the bane of better storytelling, is an exceedingly common detail.
