Well I wouldn't say it's for lack of trying....to quote you, it just "looks like" she isn't doing anything.

It's quite hard for her to figure out how to exert her power again. You can think of her getting strong trough the system before as like being in a game where you reach max level using cheat codes. When she became a god, she kept her level but not only lost her cheat codes, it's like the game broke too and all the gameplay mechanics were removed, and now she has to "program" the game herself. Imagine that scenario in real life, I don't think most players even know where to start, let alone do it in a timely manner, then you add the fact that said players were in easy mode in that game too with cheats. I mean, not saying kumoko had an easy life, certainly the opposite but how much power she accrued was definitely a cheat.

But you're also right. The more situations she's put into danger the more she just has to get it right. Not much of a spoiler since the story can't progress without it, but it won't be long now before she starts getting back some of her power.

All the tempo and cohesion there was is gone.... I had high hopes for this one, having stayed so pure to the dungeon-levelling-isekai theme (as opposed to the novel and anime).

They didn't become aggressive after attacking Mom.
They became aggressive after learning the Truth of the World, and decided to take extreme actions to save the world, since it's their home now.

Nope, it is due to them attacking Mother. When they eat/attacking Mother's soul and take her power, Mother's hatred for humanity mixed to Shiro clone personalities.
That is the reason main body Shiro couldn't understand why her clones decided to kill everyone and vice versa. They become too different.

The extreme hate that Mother want to kill every human is inherited from her creator, Ariel.
Offspring creation skill make the created inherit some of creator aspects. Shiro(During Kumoko time)'s offspring has her style of fighting and leveling. Mother has Ariel's hatred for humanity.

(by the way, this stuff is the main reason why White PoV only sucks, it wouldn't have been a problem to follow her start to finish if we knew the same thing than her)
