Heres some to start. I seriously need to make a manga list always forget titles but remember plots and small details 😅.

"Hagure idol jigokuren" not bad fights when it decides to focus on them.
"Knight Run" wish they animated this webtoon has some nice action.
"Kengan Ashura" You probably know about this already but i recently binged it not bad.
"Peerless dad" Korean cultivation manga never let you down
"Gosu" Another good korean cultivation manga
"The beginning after the end" Magic+martial arts not bad

@Syanindita it could be any of that, I'm more focused on the directions of the actions itself, to explain, I think that it's good when: the fight is clear, you can understand what the characters are trying to do, how they are moving, how they fight, the hits they land have some sort of effect and they are not just punching bags that can take as many blows as the author wants just to progress the dialogues.
I think martial arts would be the category where this criterias would be abided the most, so stuff like "Holyland", "The Breaker" or "Blade of the Immortal" to say a few names. But theres no rule that says it can't be a fantasy, in fact theres "The Wolf Won't Sleep" that goes by this standards a lot.

Hagure idol has been in my plan to read list for a long while and one day I'll read it.
I've read kengan ashura and I liked it quite a bit.
I tried Gosu but in the end didn't like it, felt like the action was too chaotic and not so interesting.
I have a bias against cultivation manga so I'm probably never reading Peerless dad.
The beginning after the end is also in my plan to read and I'm waiting for a lot of chapters to stack so I can binge read it.
Never heard knight run so I'll try that right away.

Peerless dad isn’t a cultivation manga (I think since its a Korean manga and I only ever see him exercise whilst breathing), it’s about a guy who’s super strong in terms of durability and strength because of his training (who also has kids), try reading the first chapters to get a taste.
I heavily recommend it. It offers great fight scenes and art. The main character is pretty human and realistic, but other characters have dumb stuff like air hops and flying (so I wouldn’t recommend it if you wanted something more realistic).

Though it’s more storyline focused compared to fighting (but the fight scenes are pretty cool). It’s also not a cultivation manga (I think). I heavily recommend it in terms of fight scenes as I thought they were pretty cool.

If you liked Kengan Asura I would heavily recommend reading this (as it’s fighting style focused).

If you don’t mind getting spoiled try reading the latest chapters (as the first few chapters are story focused). It has a variety of great fight scenes featuring several martial arts. It also has a superb art style. It showed the best fight scenes I’ve ever seen.

I would recommend Lookism if you liked the previous two but it is more story focused.

For swordsmanship action I'd recommend Blades of the Guardians and Ichigeki, a bit grotesque, but very cool.
If you're looking for unarmed, hand-to-hand combat, I'd recommend Teppu, Sun-Ken Rock, Doll-Kara (mostly for laughs but the tournament arc was good) and Girls of the Wild's (starts good, but the ending is a complete trainwreck).
Also I'm looking towards All-Rounder Meguru, Veritas and Overbleed, don't have much time to read.
