Here's the thing... The fish on sushi is NOT actually raw as in untreated.
I already went to several sushi restaurants (non Japanese) and made sushi by myself. First the fish is pickeled in salt to firm up the meat, and then flash frozen to remove parasites. I highly doubt these steps are skipped in japan. The danger of parasites is just too high. The fish also tastes boring without the salt.
