The style change on Valkyrie is most likely for her child sized body, they know that putting a shortstack with that kind of costume on TV would call unwanted attention and comments, removing the chest is likely for the same reason, I know not right towards OG fans.
Unwanted Skeleton change looks to me more because the manga design was much simpler than the novel one.

If you guys want to feel better look at Demon Lord Retry anime adaptation and the manga or novel art style, that anime was literally shit on the character design and only that made it boring to look at, failed adaptation.

I didn't read the manga, but I couldn't finish the first episode of the anime, it was so unbelievably ugly. It wasn't just the art that was bad though.

give a try to the manga, the story is good and the art is too, unfortunately the anime adaptation was made from the worst team in a animation studio that worked for money, if anyhting it damaged the sales of the novel.
But there are good news, it got a new anime adaptation with good quality.
