Thanks for the TL. The logic in this chapter is so goofy lol. The guy said since sashimi is not considered "cuisine" the entirety of japanese cuisine is not worth talking about. Huh?
They prove him wrong by doing a bit more than just cutting the fish, basically proving his point (sashimi isnt cuisine).
I would say while sashimi is a dish, is it not inherently japanese. Many countries eat cut raw fish
