It would have been a requirement if she was attempting to understand a quantitative relationship, but simply for qualitative purposes it would be fine to just record the differences in weight. She should have taken a normal week in between each test to normalize herself before the next test. Though still very commendable in terms of “ancient-style” experiment.
A larger sample set would be useful for trying to understand the magnitude of the “magicaloric effect”, but because all people cast magic with the same method, you can take that Copernican assumption of being a typical observer to heart if you lack a reason to believe otherwise. Which maybe you have considering the reincarnation bullshit. More evidence that isekai makes every non-parody story worse. She's going to invent scientific method, isn't she?
Anyway, by today's standards, her methods are bad. Like the previous comment said, there is no "break" to normalize body condition after each observation. Second, not enough test subject, so she couldn't prove that the result would be the same for significant number of people, therefore it is general. But hey, it is the first big step in magical science field and her findings would be proved by future researchers anyway and will serve as the foundation of magical science.

She ate the same amount of food, so how could she gain weight on exercise week?Maybe it's just me, but the fact that she actually lost weight after a week of exercise seem concerning?
From how she look before week 2 she barely has any excess fat, let alone with how young she currently is at the moment + she did lose weight from week 1, so if anything she should be gaining weight, because her overall muscle mass and core strength should be getting stronger and more flexible, even if it's a little.
Losing weight after exercising is only temporary since it's the calories that you've just burnt up for that day, if she actually got lighter than she was before the experiment even started then that uh...yeah

Nah that would be too cliche. Let the MC actually uses their brain for once.It would be nice if she had some kind of appraisal skill or something.
