the LN volume after this is mostly comprised of them reforming the kingdom's administrative system and inventing a magic typewriter with zero action, I can see why they chose not to keep adapting it. Euphie's coronation at the end of the volume is very cute and romantic tho

Where did you hear that? I'm talking about what the author has said on her Fanbox and Patreon and I haven't heard her say anything about 2 chapters. The volume just ended so any new chapters are already part of a new volume; those typically need 5 chapters minimum.
