Actually, in WN his skill is explained a bit more detailed. Alongside what is written in manga:

1) There is also manacost along with usages per hour. One of the reason he does not make himself younger is that his manapool will be less = less restoration uses, even if he could potentially use it 10 times per hour because of his soul remains the same
2) He can't rewind anything that had not been in contact with monster. For example, beds ^_^ He can't even rewind himself to the past before he first encountered monster - 15 yo.
3) He can't rewind memories (maybe yet)

Why is it that in so many isekai / fantasy, the whole world doesn't recognise how OP the MC skill is and somehow still think that after they got their ass handed to them by the MC countless times, is it a trope? Is it Japan thing? Is it just people love bullied MC? Because I sure as hell don't like illogical character like that, even if they're antagonist

Unlike 'common isekai' that is not entirely the case here. Here, his skill is OP only after MAXING it. Until he GRINDED it like no tomorrow, it had ~10 second limit and usable only on non-living objects. And given how XP is basically shared between party members here...
Literally 'too much hassle to bother with it' in his case. But he bothered, and here he is ^__^. Guildmasters recognized he maxed it on spot after he showed them up in tavern.

As for 'common isekai'... Well, I suppose it is just sells well in Japan. I even heard there is some kind of censoring, forcing authors to 'stick with the meta'

@Klauthzer0 Just because he has the power doesn't mean he is god, he doesn't have some instant-kill ruling ability he has to be realistic and be careful with how he uses it lol. If people find out about his abilities they could restrain him.

@Klauthzer0 You didn't pay much attention to the story. You missed out on a lot of important thing like what's his character all about. (selfless,no greed). Someone with virtues like that has no desire for welth. All he want is to finally do proper adventuring after all those years of solo farming for his friend. And you perpetuate him as if his like an overpowered isekai guy. This is not isekai and his skills need training, so does his loli party.
