it’s likely that it functions similarly to an actual kidney by filtering things out in this case it’s likely other people’s mana which is likely why you can’t just transfer one person’s mana to another. It could also by regulating the amount of mana inside of the body which is similar to a kidney which fluid balance

it definitely made me think of Shuten-doji, the first thing that came to mind when i saw her was "Oni"

Interestingly when Ginko was being turned into a monster by the witch, unsuccesfully but still. She did grow a horn, and did halfway turn into an oni.

So even if there's not a direct connection between her and the demon lord, and I have no idea what determines what kind of monster you become. I am still looking at the similarities here.
