to be fair, Ginko is more samurai-like in spirit and values than actual fighting, and she knows how to handle other weapons too. But I guess she will always turn back to the katana in the end.Now this is how a battle with a dragon should be! I don't care how often it plays out this way, but a dragon being an apex if monster-kind will always feel right to me. Also I could see that sword break from a mile away, but considering no one else (to my memory) use katana in this world, getting it repaired might actually be a somewhat relevant plot point for the future. You can't have a samurai without a katana!... unless they're an archer which made up a significant portion of samurai historically speaking.
She's not "really strong," she's a mythical figure. Ginko's literally been trying to find someone who can kill her in combat her whole life. Nobody could. Like, renowned swordmasters and military engagements all didn't kill her.Something that I wonder sometimes is
How strong is Ginko compared to other samurai of her time? I am pretty sure the earlier chapters showed that she was really strong even in our world but I wonder just how much she was compared to other "cream of the crop" samurai.

I suspect she's not entirely human. Back when that witch attacked. the spell turned her arm into that of an oni's but didn't do much beyond that. Buddha is real back on Earth, so it's not much of a stretch to think other supernatural beings are/were as well. Considering how many half-human, half-youkai figures there are in Japanese mythology and pop culture Ginko probably also has something non-human somewhere back along her family line. There was a flashback where her mom pulled on her dad's ear and accidentally ripped it out.
So it seems like part of the excuse for Ginko is that she's an actual genetic freak born with absurd-for-a-human strength. That plus her dad training her since she was an infant.
