But we know her. Unless "demons" are people who have been isekai'd - which doesn't seem to be the case with the sorcerer - her soul isn't a "demon", and her body is a mandragora that was actually an experiment of said sorcerer

I mean his experiment with her was explicitly to make the demon. Maybe her soul is what's important. He even explicitly thinks about the mandragora he left in the forest which is her. I think you just got so confused about what she was writing that he just assumed it wasn't

demons/witches were originally monsters that evolved into a humanoid form and had immense power, techinically MC is going through that process, but for the moment she is more on the monster side, she needs to use more points to change herself, truly a case of fake it until you make it, given enough time she will become a demon
