Is ariamel developing an elektra complex? Aka becoming a fathercon?

She just has a crush on Grey. Its normal for kids to have crushes on adults. The difference is how the adult handles it.

I've had a crush on my teachers when I was a kid. Looking back, it was just a cute puppy love crush.

Poor Aless, first an anxiety inducing social interaction and then ignored by the girl he seems to have a crush on because she's a bit too into her adoptive father. Really hope Emilia is endgame for Grey, and Ariamel gets to move on to a more healthy romantic interest. (Honestly, I don't blame the author for portraying Ariamel as crushing on Grey, so long as nothing comes of it, since it's not uncommon for victims of abuse or abandonment to latch onto those they feel are helping them out of their circumstances, and to deny this fact would deny showing how to handle such circumstances in a healthy way. It's when the adult figure in question reciprocates that a problem arises.)

I'm pretty sure we've long since shot past "developing" or "becoming." Though it's understandable since Ariamel's past would very easily lead to attachment issues since Grey is pretty much the first adult in her life that actually showed her and the other kids any level of kindness, let alone all he's done for them. The fact none of them need therapy is a miracle itself really (though Alless certainly needs help with his social anxiety.)

Honestly I thought early one she would assume he would expect something from her and she was ready to go through with that for the other's sakes. Thankfully it seems to Grey, she isn't on his radar in that regard and it seems the Ex is the most likely candidate.

From the way things are going it seems like author-San wants to set up grey with the eldest girl/saint (I think she was the saint) which is kind of weird considering at the same time she and the orphans are family to him

I read the Emelia comparing herself to Aramiel more as a playful “I haven’t reached that level of wife power yet” situation. Not as a live rival, but as basically inspirational goals.

Not yet he won't. Things might change once they all grew up.
Preferably not, it'd be kind of messed up if he views her as more than his daughter just because she gets older. Adopted or not, that kind of shift in relationship and perspective carries a lot of problematic implications, especially since it'd mean him putting off all other more suitable (for his age) companions. Like maybe if he was in his early 20s (just simply because we'd know he at least wasn't grooming her, even if it'd certainly look like he was to an outsider, but even then it's iffy) but he's in his 30s (we know that he was with his old party and Emylia about 13 years ago, making Ariamel about as old as his departure from his old party.)

she is the kid's mother figure and he is the father figure
He will just wait for her to be a little older, like a gentleman

I think he assumed he is a mob character because he doesn't remember Gray is in the game, but keep in mind he never played the game himself, so he only has surface level knowledge.
I wish I remember WHERE I saw this, but I swear I remember hearing that Grey was a miniboss/unique enemy in the original game.

It might be from the WN character introduction page, but AFAIK it got updated a few times and some lore got revised. The latest version only mentioned Gray appears in the game and nothing else.

Yes she's formidabele AS A DAUGHTER! I don't think Grey will ever think of her otherwise. At least in this story I hope.
From what I heard in the comments a few chapters back, and assuming I’m not just completely misremembering them, she does end up having a very much one-sided crush on him at some point. The usagi does not drop though, so we don’t really need to worry. Again though, that’s only if I’m remembering what those comments said right, so grain of salt and all that.

I know he at least imagined that he was probably a villain character the MC of the game would end up defeating in the future, which was part of what inspired Grey to help the kids in the first couple of chapters since he'd rather be on the MCs good side, and then that one decision led him to where he is now, talk about a win-win.
