Probably a budget issue. Nobody ever has the money to do it right the first time but somehow you always find the money to do it right the second time. Or, in this case, the third or fourth time.

Don't forget there still war going on, they can't spread their forces simply because some slave punched the spoiled princess. I could imagine parents being not happy that they lose one good knight because of this as well
There is a war going on and they are on the enemy country. The first noble did ditch of his company for the sake of glory through.
True about the war. But then they're just wasting single soldiers at a time, which is pretty detrimental during a ongoing war. At this point, they'd be better off just not sending any more men (especially if they're not gonna send a small party at minimum) after the duo and instead focus purely on the war effort.

Anyway, I wonder what this joke was in the raws. Puns usually don't translate directly.
In the raws, MC says "soukai", which in this case means "I see", but can also mean "refreshing". Slave-chan then sarcastically and cornily compliments him on his pun skills, "as expected of the commoner".

Water from a well is surely cleaner than water from a stagnant body of water surrounded by thick vegetation. That "holy spring" is practically a pond or a swamp if you ask me. If this had color I'd bet the spring was dull green and murky...

A town (of cultists) that bans clean water? What's next, a town that bans fire?

Haha, the Greek Gods were such assholes! Reminds me of the story of a god challenging a girl in a competition, the girl won, and is then promptly turned into a spider. Why did people ever praise these awful people?
