Asumi is already a top-leaning switch, her barrier to topping isn't really skill, just self confidence. She's had a lot of sex with Nanao, so she's very comfortable being intimate with her now, nothing like the awkward fumbling of their first time together. That gave her the confidence to take charge when she felt like doing so the last time they fucked.
Asumi doesn't have that kind of experience with Mai (yet), plus she's been building up the reunion with Mai in her head for years, so she's definitely lacking the self-confidence to top still.
She's struggling to top Sayaka during their "training" for the same reasons, plus in Asumi's mind Sayaka is probably like, the Ur-Top or something. If she can learn to conquer Sayaka then Mai will be a walk in the park.

Asumi's biggest obstacle in topping is that she's super-sensitive, so any small counter-attack is enough to derail and defeat her, made worse by the others' inability to resist counter-attacking given her reactions. So basically anything but a 100% pillow princess is difficult to top.

The only thing I don't want in the series if for Asumi to ever have sex with Senpai. Because it's just a way funnier dynamic if they are both super into lesbian sex but never have sex with each other.

Sayaka ends up not joining the inevitable polycule and instead dates senpai instead would be the perfect ending.
Either that, or senpai remains forever single.
If senpai does get with Sayaka, though, it'd have to be a Silver Rayleigh One Piece sort of deal, where she still goes to brothels and has sex with other women, but she always comes home to the wife when all is said and done. I just don't see a world where senpai gives up lesbian brothels.
