Oh noooo, the source of all evil! The deadbeat dad! Cue the drama!
As people noted previously, Melon's mom could have just explained it. Or she could have told some usual lie about daddy working as a sailor or a military man or an astronaut on a years-long mission, whatever they have in their world. Of course, that would still raise suspicion. And of course either she was too unstable to be a proper single parent (and Melon inherited some disposition for mental illness from her) or Melon's unhealthy mind was distorting whatever happened since his early childhood. Or the dad's a psycho who disappeared deliberately hinting at him being killed by his girlfriend/wife, without any regard to her and the child's wellbeing.
All that actually makes me wonder if in this world deadbeat dads are actually a rare thing. That admittedly would make this case a big deal.

@Zen44 tbh I will rather think the worse then be proven wrong then be on the fence then be dragged a direction, it’s not my feelings for everything but with stories, honestly looking at the brighter side of the fence makes it harder when dragged down the darker side of it, least it looks brighter

Judging by the fact that even the father mentions how much Melon's mother loved him (the father) it seems likely that when daddy up and ran off the mom justified the leaving in her head as her eating him. People make up false memories all the time as a way to cope with traumatic experiences so think about it this way, Melon's mom thought they were in a very loving and committed relationship so the only logical reason why the dad wasn't around anymore must be because she accidentally ate him. She is a carnivore after all and carnivore's are known to eat meat and have trouble controlling their urges. It couldn't be that the dad just left because he was a giant douche who didn't love her or their son anymore, that's ludicrous.

Not to mention that the dad openly admitted that he always felt like the mom was going to eat him so chances are he probably gas lit her a few times even if unconsciously so the idea that she was a dangerous predator was probably on her mind a lot. It's a similar idea to why abuse victims rarely feel like their abusers are at fault even after they've escaped the bad situation. It's very difficult to change your world view when it's so deeply ingrained in how you've lived your life for so long. As Mr. Beastar started to say, the true villain in this arc is Father of the Year.
