More specifically, the full line is:
あたしは柚子のそういうとこ憧れてたしー
好き…

I'm not the TL for this series, but based on my amateur understanding of Japanese, the most literal translation would be along the lines of:
"About that part of you, I always admired it and-"
"love (it/you)"

I think the most natural way of reading it in Japanese would be to carry the object to the "love" section, so simply translating it as "I love you" is highly misleading. It probably can be understood that way, but obviously the relative ease with which Minami said it definitely implies that a romantic reading is not the most common meaning to take from what she said.
Yeah, that line is definitely hard to translate literally into English. To be pedantic and quite technical, there's two important parts to point out:

1. the し at the end of the first clause is expressing that the clause is a reason (and one of several for that matter) for the second clause (in this case the second clause is simply 好き)
2. The second clause does not specify a subject. 好き is actually an adjective, so Minami is describing something, but again, does not specify verbally

A very very literal translation would be more like:
"Because I admire those type of parts of Yuzu, loveable"

So it could be that "those parts of Yuzu" are what is loveable, or it could be Yuzu herself. I'd argue that the second interpretation, Yuzu herself, is the more natural way to interpret the sentence, and with the complete context we do know that was indeed what Minami intended. 好き itself is very ambiguous as to whether it's romantic or platonic, but the line can sound quite romantic, and again with our spectator's insight we know that it is.

Thanks for the insight into what would probably be more a more natural reading. I would actually argue that a romantic reading is specifically not how Minami intended it. We've seen plenty of times already how Minami is constantly chickening out at the last moment before saying anything she herself would consider romantic, or at the very least she gets caught up in the mood and moves/speaks without thinking, then regrets it later. If she consciously understood that what she was saying should be taken romantically, I don't think she would have said it at all. That said, I would definitely agree that the subconscious reading is romantic.

I saw Cuetie Scans, I came for the fluff. Ah, this two lovebirds, they're only on the same page when they dream (or at least one of them), I'm looking forward for more bed cuddling!

She got her answer a lifetime ago. Thing is, Yuzu, people change, especially from being a child who shouldn't know what love is to a horny teenager so might be worth asking the question again.
