It's true that the human could die, but the fact that all monsters are rapists (disregarding the success rate of the breeding) should have been known to everyone. It's shouldn't be a locked, forbidden knowledge. She had to go out of her way to make herself indestructible and immortal for this, so while it's a thing that can be done it's not likely quick nor efficient under normal circumstances. A completely normal human would probably end up rupturing like a bloody balloon in the process for the more explosive breeders, while the ones that at least go one at a time like the roper just completely break the person's brain instead.
And the breeding was quick and efficient. Though if the victim is normal then they would indeed not be as quick and efficient as MC.
One slime can quickly propagate into multiple slimes in a matter of at just few minutes. The victim would indeed die if they propagate that fast as what happened to MC, but who can be sure that they couldn't do it slower to keep the victim alive? Because the forbidden knowledge exist, someone should have survived the ordeal. Not to mention that baby slime's first instinct after being born was drinking victim's milk, which means that the victim would normally be alive after the breeding process.
For the roper, it doesn't need victim's full brain faculty, they just need victim's working womb.
