It's been explained on the first page of each chapter so far, but you have it backwards. What we're seeing are the Vtuber models being used to portray their real-life selves. One way to think of it is how after a vtuber shares a funny story that happened to them in real life, artists and animators will use the vtuber appearance (even if the real person's appearance and identity is known). You can imagine this manga being that kind of work, portraying the behind-the-scenes happenings of these OC vtubers.
