I do like how he just assumes the milk can be made into cheese, all mammals produce milk but only a few types of milk can be used for cheese. And just because Satyrs are goat-like doesn't mean they're milk will have the same properties.

I really doubt the author will go to so extremes of realism for this kind of work.

Definition of "realistic" and exact milkable animal in question aside, there aren't any rules that say which species various traits should come from. It's not more or less realistic to have the milkers be more human-like or more animal-like. It's not realism you're arguing for here, just personal preference.
