I think the most rational in universe reason for this is that she straight up didn’t know she was a Saurant origin beast until after the Octopus groping. Maybe she found out when they tried to give her the beastification surgery only to find out it wasn’t needed, or perhaps Seira took the opportunity to tell her as to mold her as the secret weapon.

Yeah, it's a dumb plot twist with no foreshadowing, but the plot has already reached its climax so it doesn't make much of a difference, it's just to give the bad guy a karmic end.
