This is a very common thing, because good luck being 100% consistent while rushing every chapter you do (mangaka have basically no free time). That's not to mention that mangaka also usually have assistants who do low priority things (usually backgrounds and shading, but sometimes character as well when it gets critical) and naturally they can't immitate the boss' art style perfectly.
