To be fair we stopped seeing his hands before his head exploded. And artistic liberties were taken to have what he wrote be that large, it would have been much smaller. So he wrote it while his neck was inflating and before his head exploded. Also remember that he isnt a human and is more durable. This is a manga based on a LN and the artist is more known for thick lewd girls than story details, They aren't changing things, but some things are depicted a little badly.

My guess is he started to write it with the blood he was choking on as soon as he lost the ability to speak. We don't really know how long it took for his head to explode. It might have been quite a few seconds.

I think it was more to send a message that the demon lord of black has the reach and ruthlessness.
