Hermine more interesting is probably due to the fact that we saw more of her though about MC imo, although bad new for you that Lily appearance and her though is pretty much the same compare to wn though.
Although I think Lily is more fitting compare to MC though. Hermine have 3 major problem if she want to compete for the FL role: noble lady, her sister, if she do it then it will be more because of her duty instead of her own feeling. Remember the reason why Welner never have a fiancé before:

Meanwhile with Lily:

I couldn’t imagine that there would be any other women in the future who could become as close to Welner as Lily, so even if they didn’t become a couple, Lily’s existence could be called a ‘great blessing’ that could change Welner’s distorted perception toward women."
"I asked myself inwardly. Could I ever look at other women with the same feeling I had for Lily? Could I direct these feelings to any other women but Lily?"
