I’m assuming when she gets a new “suit”, she does something like when we eat escargot (open it carefully, then eat the main contents and then slurrrp — or she just goes straight to the slurp part) to leave the “shell” intact.

Chances are it's a doppleganger or a shapeshifter that "picks up" where another monster has been. Almost like how detrivores eat the remains left from carnivores.
