so 2 of his new "attendants" are little kids and another one is the sister of Oda so that's 3 people who are just guests that MC has to care for, why can't she just hire her own retainers? why is she limited to so few and why are they only chosen by Oda? this is so stupid, is she a landed soldier/lord/advisor/whatever or not? she should have some damn power to make decisions of her own.

She has so few attendants because she doesn't care about that. If you'd actually payed attention you would remember that she has very little to no ambition, to the point that whenever Oda offered her rewards, in the beginning, she would always choose simple things like time off or more workers. To put it simply she doesn't particularly care about luxurious things like attendants or power in general.

Stone splitting is pretty cool. I guess it's not unusual to have some extra iron wedges, but did she just know that the craftsmen would already be familiar with it?
She provided the idea and principles, they provided the craftsmanship and workforce.

The most difficult part would be the grain reading part, but if they are good enough stonemasons she just needs to say what she wants and the rest is relatively easy.

Having basically read this historically accurate story and annoyed at how ubisoft decided to cuck Oichi in their AC game. Seeing this happy well adjusted family and then Oichi was NTR by Ubisoft's diversity poster child
