1. Them being able to spend money on yakiniku, this implies that they are possibly well off and her reason for doing these jobs was to pay of debts (could be reading into this too much.)
2. Could be more of a slow realization for the viewer if they figured it out that the original siblings are possibly all alone and have no one to support them
3. The siblings somehow know that the sister came back. either this means that a new alternate universe was created from this train entity or they maybe didn’t make it out?

Aside from the big bro changing the storefronts signs changed. The Kanji for fish changed in the first store. Second store sign changed from "Has (Dont know the specific Kanji but its related to fish) and Unagi (eel)" to "Become Salmon(?) and Kujira (Whale)"
Idk if their personality changed, they've always been beholden to their big sis. They were only not polite cuz they felt awkward meeting Blondie the first timethe last panel is the biggest hint for something is not right.

That's a good catch, the store fronts was shown in all three chapters, and it didn't change until Chapter 56. One other difference is the height of the street light in Chapter 54 and 56. Although that could be just because of the angle. Keen observations. The first kanji is koi carp. The 1st store sign changed from 魚党 to 魚王, with the 2nd floor sign changed from むやさき屋 to ぬやさき屋. Since their wages were there, either the universe itself was altered with no swap involved or they swapped places with other versions of themselves that just went through the same thing so ironically, switching universes has little to no consequences for anyone involved.2.
