My friend, "modern" dragons are a simplification of the tales by medieval jesters and poets.
All the "cool" features you seek are right there, the dragons just were always the enemy which is what you want not.

Well, Dragons are experts at stealing other's happiness and hoarding them like treasures, besides dragon killers like Saint George in Medieval literature there are, like in the image, dragons who seduce princesses to take them away, not kidnapping them. They absolutely don't. "Real demons" are able to defy God despite being created by Him, comic demons are unable to even stand up united against disparaging comments by the general population.
The most "cool" demons you'll find in the current era are from Frieren and only because they are enemies.

1. We don't need a dragon hoard trope. Why is it present even if dragons are good guys?
2. We especially don't need a dragon steals a damsel trope since it is dumb and a shapeshifting dragon trope simply kills this trope.
