I don't understand how anyone would assume that Harris would look at Tiana like a daughter. The only reason he even kept her is because he spent good money on her and that would be wasted if he returned or got rid of her, so he decided to keep her and develop her into his type of woman, essentially. Normal prior to the 20th century meant children would be put to work as soon as they had developed enough wits to be able to do something. After the massacre she was taken by her uncle, who mistreated her, so we can assume the uncle treated her like a slave. So, she would likely clean, do laundry, and cook food for the uncle's family, even though she herself probably ate worse food than the uncle's family. Maybe she knows how to recognise edible plants because she needed to do it to survive.
