Is there a missing page between 9 and 10? What a rough transition
There's no missing page, that's just how the pages are laid out and the story progresses in the raw and Non-essential_npc perfectly explained that kind of transition.
I think it's supposed to be a in media res cut from them talking about a thing (finding creepy dolls in oddly good condition) to that situation happening. It is a little abrupt.

In Page 17, the Priest wishing the Nerd to learn his lesson is raising a red flag. We'll see the nerd getting into trouble again in the near future, wait for ch. 67 & 68

Man, I love how "matter-of-fact" supernatural phenomena are in this universe. My favorite part of the expanded lore of the town is the whole Nagi matrilineal line of shrine maidens, about Saeko-chan and his "disability"(?) of null spiritual perception but still being a heavy tank of raw power, and her family supporting her secretly so as not to discourage her

It seems the "spiritually inclined/gifted" families of the Jurota bloodline are matriarchal. First the Nagi Mikos, then the Misogiya family, and the Tomita family's expected heir on their side of the mountain is a girl.

Really cool worldbuilding.

First page of Chapter 3, the flashback on why the sisters tried to seal him, there's a human sacrifice by the villagers in the 3rd panel.

depend, personnaly, i prefer to take it with a grain of salt, that kind of story can be warped and biased, unless we see flashback from yasaka that show the deed.

there enough moment in the manga to consider really that yasaka is not responsible of all the bad thing that happen.

All the flashbacks for Dara-san are being told/shown by someone that was not directly involved in the events, so they are canon. As for Yasaka he was showing the girl his memories, but he saw events he shouldn't have been present for, so those are unreliable.

It may have been Ryukan retelling both backstories though.

which event yasaka see he was not in ? i'am curious now.

but no, even with flashback, all the event are not reliable, just with yamatagi madara's legend:

in the same chapter 3 that you use to show that yasaka eat human in page 2 : https://mangadex.org/chapter/7ce55caa-9a37-4f6a-9718-403518a65a14/2

the story continue to explain that the snake, after 3 days and night of fight die and to avenge itself from the betrayal of the villager, take suddenly control of one of the prietress and thuse created yamatagi madara.

but that story itself is completly false, there was 2 fight against yasaka, and there were separated by years, not a only fight, but 2 battle.

and let's not forget that we were lead to think that koharu was the one provoking the event, making faulty seal and liberating miasma, when in reality nothing like that happen.

and there are more exemple that the story is biased by the perpective of each character, so that why i don't trust the story.

Yeah, I don't think Yasaka was ever "evil", its just after Tomoe came to such a hideous end he decided that all humans suck. But he's now in recovery with Amane and the other snake club girls!

Ok, I’ve taken out the holy pin, and I should count to…?
Armaments, Chapter Two, Verses Nine to Twenty-One.

And Saint Attila raised the Hand Grenade up on high, saying, "O Lord, bless this Thy Hand Grenade that, with it, Thou mayest blow Thine enemies to tiny bits in Thy mercy." And the Lord did grin, and the people did feast upon the lambs and sloths and carp and anchovies and orangutans and breakfast cereals and fruit bats and large chu-(Let's skip this)

And the Lord spake, saying, "First shalt thou take out the Holy Pin. Then, shalt thou count to three. No more. No less. Three shalt be the number thou shalt count, and the number of the counting shalt be three. Four shalt thou not count, nor either count thou two, excepting that thou then proceed to three. Five is right out. Once the number three, being the third number, be reached, then lobbest thou thy Holy Hand Grenade of Antioch towards thy foe, who, being naughty in My sight, shall snuff it."

The Dao of Saeko-san
It doesn't matter if you can't see the target if you just blow up everything in the general area!

I’m suspecting that the op priestess has something(mountain god)blocking her perception for their own ploys and schemes.

a couple are the scene were the doctor buys tomoe in 60, or in 61 when the doctor and tomoe are talking before he starts his experiments.

also as for how reliable the human sacrifices actually happening can be considered, in this very chapter yasaka calls tomoe his first sacrifice.
