Shime-parfait is from Sapporo, yes! It’s a trendy substitute for shime-ramen, where after staying out drinking you eat ramen (and why some ramen shops are open from midnight to 5 am). They tend to be really elaborate and creative parfaits with all sorts of little seasonal goodies. Why Sapporo? Because Hokkaido has the best ice creams and sweets. Not even a contest.
