I don't really feel good about how this is guided to progress

You could just declare that your father is an important person and suggest that they’d get more money by ransoming the two of them.

Ransom only works if you can get away with it. basically situation where either you are unknown to both kidnapped person and people looking for them (and have the means to safely retrieve the money before escaping, assuming someone will actually pay you), or have means to enforce your safety (ransoming noble prisoners of war for example).
Here they are probably somewhere in the city (there will be extensive search, house by house if needed), can't escape easily with their merchandise (in this situation any exits would be guarded, any cargo searched).
Once they realize they kidnapped kid of the lord of the area AND kid of one of the military commanders of the area, they basically have to abandon their whole operation and run away.
Kids - either kill them to leave no witnesses (no faces, so potentially easier in the long run - IF they get away), or just leave them alive in place, hoping that the fact that they were found alive and relatively unharmed will mean that they won't be searched with the full power of the forces there (but their faces are still known as the wanted men).

Sure, this dude will probably help them escape and get a pardon for that, but realistically he'd get painless death as a prize at best.

Man, was thinking of commenting how good it was that they had bodyguards and from the few panels that they were doing there jobs. Like the author having them in the background and looking around while the kids were doing their own thing. Was great in my opinion, and then the second part of the chapter happened.

Like WTF, the pickpocketing was already so stupid and then they send a 7 year old girl home alone and the MC goes after her without a guard... So stupid! Like the first two chapters were great but don't have any idea who wrotes this chapter...

Did the guards betray them?

No, they just ran off leaving the guards or they simply weren't there.
It's just, why would they send her to go home by herself with no protection. No sane father would do that. I understand why the MC would go with her for that exact same reason but wouldn't he also need protecting on his way back? There's so many plot holes, it feels like they're just trying to force the plot to move forward.

If they needed guards throughout the city, why wouldn't she need guards on her way back?

Another work around would have been have him or the girl have a little wilder side and suggest they sneak out for a spot she didn't show him before and thats how they got capture.

I agree. Honestly, I will be disappointed if he is pardoned with no consequences. Save his daughter, she's still a child who has nothing to do with this, but punish him for being an accomplice in kidnapping and trafficking children. Oh, and mutilating them as well.
