Since the princess is most likely the demon mage, its probably only the highest rank people are aware they joined with the demons. It also would expose a lot of the lies where the good knights and the townspeople are suffering as a lower caste for the demons to run their war which could be easily discovered if they talk to somebody not controlled. By starting a war, it forces the heroes to grow and also have a way out.
