Considering the reach his family, especially his father has, I think I understand why the MC would not want to join the hero party. My guess is that even if the MC doesn't murder the saintess, I could see the family sending an assassin to frame him for the murder.

On the flip side, he could join for a while and then leave the hero party in some other country and then be well away from his family's influence.

How the heck did the Saintess learn that MC saved that Beastgirl?
Plus she wasn't even a slave, she was a poor homeless girl who got caught and was about to be sold as a slave, but MC saved her before that.

On the flip side, he could join for a while and then leave the hero party in some other country and then be well away from his family's influence.
That is assuming the Hero Party even is capable of leaving the country.
I mean, i wouldn't be surprised if the game was set in s single country with no mention or focus on neighbouring nations.
Just because the game player is called the Hero, doesn't mean he has to fight some global issue.
A Hero could simply be someone who fight focuses and fights against local issues as well.

He's the son of the ruling lord, and he rescued a beast woman (who is clearly far beneath his station) in the middle of a busy street in broad daylight. That, combined with the fact that being into beastfolk is considered perversion, rumor and story would've started spreading immediately.

The question isn't really how the Saintess learned about it, but how she learned about it so quickly. We don't really have a sense of how much time has passed since then, but given that Fii's uniform is bespoke, it's been at least a couple days. Is that enough time for stories and rumors that juicy to reach the Saintess? Beats me. If she was passing through the area, then it's not impossible, and if she was known to be in the area, there's a chance that one of the Church's other agents heard about it and rushed to tell her.

Kinda unrealistic.

The girl who is beaten by people everywhere keep refusing the chance working for a noble. She can be wary but shouldn't refuse such invitation because working for a noble mean under the noble's protection.

A kid from slums who dared disrespect noble when they should know to keep their distance from the nobles if they want to be alive. If he is not MC and any other member from his family these kids would already die because their actions.
