Tbh, Isekai is definition of Generic. Only real way to not make it generic is to figure out how not to make all the girls fall in love into Male MC, and all the Princes not fall for Female villainess.It sure is generic, but I think it's just a nice read for when you're bored...
Well, breaking cliches for the sake of being different isn't so good either, I think it's best if author's began expanding on these ideas, like, why always fantasy Isekai? It would quickly alienate half of potential readers cause as is with "fantasy", "post-apocalypse" isn't exactly super popular either.

I was more referring to "fantasy" genre myself, cause that's exactly the type of Isekai I enjoy. Killing dragons, drinking ale at the bar and clearing out dungeons.
Same man, same. Do check out "Otherside Picnic" though. It's not really "isekai" per se, since characters can move somewhat freely between worlds, but it's closest thing to what you described. It's pretty underrated and is probably closest thing you will get to Stalker'esq isekai manga.True, it would certainly alinate a lot of readers, but I do think there's a way around it.
The story can still be a pretty generic Isekai, it just doesn't have to do the same thing(keep the academy tho, it sells), a lot of ideas come off the top of my head honestly, honestly I'm REALLY itching for some good old dungeon clearing story with no magic or politics/academy stuff, just straight up dungeon crawling
