She's still trying to understand what it means to care about other people. Like how she decided to pick Tigur from the dungeon. Later she also trained someone to how to fight and be stronger to decide their own life.
In her past life she had her hands full trying to get the job done and got paid enough to live another day, so this room to think of something else is new.

As for Evan, I think it would be normal for her to have more positive opinion of him.
He had been trying to talk with her for years, but keeping a comfortable distance. He didn't pry on her secrets, and slow down to give her time to think rather than trying to dominate the interaction. So, she would at least be more comfortable with him compared to other people outside her secret job.

Compared with Einrich who is pushy, or other girls who just enjoy gossiping.

Another one she would feel "I'm going to feel bad if something happened to them and I didn't do anything" is Scaranet (the big forehead girl).
At least she is not scheming, and bear no malice towards Serena.
Quite positive that despite her annoyance on Rosemary, she'd save that sister from trouble if she's within arm's reach, even with putting excuse like for the family or her peaceful life.

I feel like a great way to have her save the prince without the romantic undertones with let's all be honest very little chemistry between them is to have it be about saving a life and doing it unconsciously. She lived as an assassin taking lives and now despite still being an assassin she has a home she can come back to.

Give her an arc about appreciating life you know the natural arc that you would write for an assassin reincarnated and given a second chance at life. Isekai's rarely touch on this topic, like seriously a bunch of mc's are out here murdering people when they are the ones who should value life highly. If the subject is touched upon it's like in one goddamn panel, that is a very heavy and drama filled subject that should be expanded upon.

that 2nd prince chooses the "heroine" type and got destroyed due to that too, bring exposed by the 1st prince right after the fall of the adopted one.
the 2nd prince mom trying to assassinate 1st prince as the last struggle and MC cut her head due to how she is affected by that event too.
