Forgot if they included it in the manga, but the novel explicitly states that due to her developing mana at a young age, her body physically aged further than what her actual age is. I remember reading the WN years ago and every major arc has a passage that mentions something along the lines of "Despite their maturity, these are still children". There are... other problems with developing magic/mana, but I believe when she is 14-15, she looks physically like she's 20-25.
I thought she was also "mentally older" because of getting her spirit mixed up with the original Isekai'd woman who was trying to kill her?

It's a bit weird in her case. Aria is more of a case of "forced to grow up" child rather than the memories aging her up. This was in the WN (I haven't read the LN), but the memories she got from the crazy chick were mostly just technical knowledge and none of the personality ones. Simply put, she got a glimpse of a possible future, didn't like it, and ran away from it all. A central theme of the story is Aria's mental state still very much being in her child state even as she gets older. She is still very naive in matters not related to killing or survival, or strengthening herself. A strange thing is that Aria is projected to be mature, but is actually just a very withdrawn child.

It's like when you're in the mid-levels in Skyrim and just go out to sweep a bandit camp for one of the innkeepers' "random side quest" deals. It takes you no time once you've got some power and equipment and experience, and that's effectively what Aria was doing here to multiple slaver groups.

I don't think it's particularly strange though "Mature" is maybe the wrong word for it - I think "Single Minded" is more apt

This is a girl who doesn't think of anything other than survival and doing what is necessary - the kind of person who won't have anything else after they reach their goal, in her case being "Avoiding The Plot" I suppose

Idk, I feel like she isn't very simple minded. She is very calculating, thinks about her enemies and their motivations. Creates elaborate plans that factor in the larger picture as well the immediate consequences. She makes very sound conclusions and is shown to have a constant running internal monologue about things and even thinking through how it logically makes sense to wipe out this branch of the assassins guild because it helps her new master, helps her, and helps a future where she might need to kill someone for her princess friend she made.

If anything I would think she is an overthinker because she takes very few actions on a whim and is constantly weighing cost benefit in a given situation.

She is super simple in terms of her life goal of, "I don't want to be controlled and be a puppet" but all of her actions support that life goal very intentionally
