@Pyoro If you read "Nobunaga no Chef", you will know that Nobunaga's army is the first army that composed of entirely trained soldiers.
Of course, the samurai are still the commanders, but there are peasants who stop doing peasants' works and enlisted themselves into the army since the pay is better and they have a chance to improve their social status and make a name for themselves. One example is Toyotomi Hideyoshi who was a peasant but rose into the samurai status. And from what I read, the pay for Ashigaru is really good, one day could equal months of farming, so even if they are content with their life, they still want to join the army. The chance of them dying is the same with their daily life anyway, with bandits and dangerous animals around, not to mention that when war broke out, they would still die due to the invading army stealing and killing them.
