I think it is more a case of the sequel taking a greater and more serious focus on the health aspects compared to the "fantasy weight gain gag manga" original version.

Synecdoche is pretty active on Pixiv and Skeb so I don't think we need to worry about over work. The color version is likely being done by someone else at the publisher after the pages are sent to the editor.
