Not sure why Himmel is so popular? He's a bit cringe while younger and has very little character development.

He is the embodiment of the Hero.
a classic Hero without seasoning or twist.
while the other media's hero was just secondary or differential which you will question what is heroic in that series.
while Himnel is not.
the premise hero like Himel only exists in retro video games.

like you said his character may look bland.
but that is what the original hero is like.

He's written as an ideal image of a stoic down-to-earth hero, so it's hard to actively dislike him.
The cringiness of his journey days is 1 of the few qualities of him that makes him imperfect, therefore "human". It's comparable to Frieren falling for the stupidest traps just because there might be spells inside the mimic chest, or Heiter's drinking habit, or Eisen's disrespectful manner that almost got him and Himmel executed.
The reason why he has no character development at all is because he is not treated as a "character" anymore, in a way. "Himmel" as a character is already settled from the start, what we're looking at is him from the POV of Frieren's memory and others' memories of him.

Apparently I was wrong, it was actually Himmel's party that defeated him(according to wikia). But nonetheless he should have perished; three of the Seven Sages of Destruction were defeated by the Hero of the South, two were defeated by Himmel's party, and two managed to live through that era, Macht and Aura, however both were done in by the current party (see chapter 63 for details).

Only great demons should be left like Rivale and Tod. And maybe the number two of the demon army if he really wasn't killed by the hero of the south.
