I wonder if it's as simple as the "human" side are all ningen (People) while the destroyers are all mazoku (the Tribe of Evil) or some similar terms.

Japanese has a number of terms that can be inadvertently misleading when taken literally, but they also sometimes have like six different words for the same damn thing.

been a while since I checked WN raws but afaik it's exactly that over there.
Humans, elves, dwarves and beastfolk are "human" (ningen) and everyone else are Destroyers, Ruins of the Destroyers etc
In WN latest translated arc we have already seen some of them
