Saki is still a child in school, and a girl who's a lesbian on top of that, struggling with very intense internalized homophobia.

She perceives everyone as out to get her because of this, especially in the case of Mahiro, but her perception was challenged when she actually met her again.

I don't this it's at all "too exaggerated" for someone like Saki to feel like she's truly feel as conflicted as she does, because her worldview has almost been completely shattered.

You can obviously see the progress being made here: she realized her Mom wasn't actually being dishonest or hiding things from her, then that Mahiro just wanted to be closer with Saki, and finally that Kanon also loves her. Saki never imagined any of these would contradict what she's always believed, so this chapter is the culmination of that, where she is coming to terms with the fact that she is the only one who's been holding herself back the whole time.

So, yes, Saki has been exaggerating a lot, but it's important because it's the climax of her self-actualization not just about her feelings for Kanon but also everyone else around her that she projected onto. This has been built up for a while during this arc so I don't think it's really out of nowhere, either.

Honestly, there's a lot of projection from Saki that kept her from getting the truth, and I think this is a healing moment that Kanon wants to learn about her real self. There's no judgements or criticism in the way Kanon is purely curious of her, and that's sweet.

You think a decade or more of self-loathing is going to disappear in an instant just because the girl she loves confessed to her? If only it were so easy. That shit stays with you for a long time, even when it’s not warranted.

ETA: I think in a more traditional Yuri rom-com, Kanon’s love would be enough to instantly “cure” Saki’s internalized homophobia and self-doubt. But Kuzushiro is going for a more realistic story here, it seems. Or so I hope.

She’s a kid man just a high schooler with I’m assuming major insecurities and low confidence? I don’t think it’s that surprising especially after we found out the middle school girl wasn’t bad like we initially thought

sure, i can see that, but even then you'd have a different reaction to the person you love confessing their feelings to you.
she heavily projected onto her friend, it got resolved.
she heavily projected onto her mother, it got resolved.
now she's heavily projecting onto the girl she loves who confessed her own feelings to her?
no.
at some point it needs to stop or the person is unsalvagable.

there's a lot of projection here to boost the suspension of believe, to the point when mc says "but you don't love me like i love you" after mc's crush kissed her, people think it makes sense

I think Saki is actually doing pretty well all things considered. Kanon is of course an absolute angel, but I also think it's consistent with her characterization so far that she would be patient and refuse to let Saki shake her off.
