Beginning to realize this whole story is really a methapor for Japan's uber doormat conformist attitude to their issues.

And the MC is the avatar through which the author shows WHY this extreme conformist attitude is a bad way to live.

The monster girls are just there so we don't get bored, and have some eye candy to look at.
Wait until you realize why overpowered isekai protagonists are popular

This, I don't know why people are shitting him so much when he's made it clear that he doesn't want to do a bunch of extra work for basically no reason. He may lack ambition but a lack of ambition is not necessarily a negative quality when you are not wanting for anything and are perfectly happy with your current situation.

The lack of respect sucks but he knows the only way he'd get respect is to put in the effort and work only for him to get better social standing (which he doesn't care about). The people who are wrong are the ones who put too much weight on social standing above just being a decent person. That constant drive to one up everyone else and prove yourself superior is not healthy and prevents you from forming meaningful relationships as everyone becomes either a stepping stone for you, a competitor, or worse a trophy.

Let's analyze the other people in this story. The main antagonist is a spiteful wretched person who doesn't ever seem to be happy and constantly shits on others in order to reinforce his superiority because he has nothing beyond that. Even among the students the only reason people flock to him is because of his rank and fame, not because he's enjoyable to be around (people even specifically hate his personality but they begrudgingly follow him because they also want that fame by association). Meanwhile Washio is content and just enjoys teaching and now has some big titty monster girls fawning all over him. Not because he's famous but because when he started out in this world he did something no one else bothered to, teach a bunch of monsters. It also begs the question of 'Monster Girls' becoming enlightened specifically due to his guidance which would make his efforts akin to a god maker considering how they are idolized.

In short, don't be an overly ambitious asshole who throws decency and humanity aside for power and status because it doesn't get you anywhere except an empty life with no true interpersonal relationships. Be considerate and actually care about the people around you and maybe you too will get big titty monster girls to want to jump on your dick (metaphorical or literal).
I agree with your point about extra work/ambition and your example regarding the main antagonist. It just doesn't warrant the teacher being such a door mat. I think the reason people are shitting on him is because he does nothing to stand up for himself. A curt "I'm not interested," or even simply not entertaining/acknowledging the BS presented to him by others would suffice. But he just takes it.

The narrative itself presents characters that basically exist - at every moment - to reinforce this idea that because the teacher is "E ranked" and old or whatever, he sucks. It boils things down too simply and gives it no nuance. Is teaching ability limited to magical ability? Not really. The teacher's relationship with these monster girls hinges on the fact that he cared enough to teach them well. It had nothing to do with how powerful he was. I get that this is a junk food manga, but the whole insecure (sometimes middle aged) man who is powerful but doesn't believe in himself has grown old for a lot of people. If his ability or level was in congruence with his status, then I could better believe his attitude. But that isn't the case.

I also agree with your last point. Consideration would skyrocket if that was a potential outcome. :^)

I thought it was implied that he didn't want the responsibility because the gov't/bureaucracy sucks ass in the setting?
I thought he was revered as a hero and it was implied he got demoted as repercussions for not wanting to be a tool of the government (that he no longer respects) anymore. And the MC just rolls with it because he got what he wanted (to be removed from politics).

But that's the thing, I don't think (at least from how I interpret his behavior) he is insecure or doesn't believe in himself. He knows he's strong and he isn't afraid to display his power when the situation warrants it. Remember when the house was burning down and he put the entire thing out instantly with a spirit summon that dwarfed everyone else's that we had seen previously (almost like the chapter was specifically setting up the reveal that he's crazy strong). He knows he's strong and I'm fairly sure he's made some side comments about how his power makes him weary implying something happened in his past that made him want to relax and take things easy.

Point being though, he's so sure of what he wants out of life that he doesn't mind all the people constantly berating him or putting him down because he lacks ambition. He purposefully doesn't seek grander heights because he's content with where he is already. A lot of you are confusing someone who is passive as someone who is a doormat. Do you make it your life's mission to prove a child wrong when they call you a loser? No, you just ignore them and smile it off like water off a duck's back. Their opinions are inconsequential to you (or should be) so why would you pay them any heed?

And again the important bit that Washio himself has stated, he could climb the ranks if he wanted to but that's just adding more responsibility and work for him to do which would take away from his current laidback life. What would he stand to gain other than people's respect, people who he doesn't really give a shit about? If the story does go in the direction of having him get promoted and "prove himself" I guarantee it will only be because his monster girl students convince him to because they feel it reflect poorly on them to have their BAE getting ridiculed. Alternatively but in the same vein, something happens that prevents him from helping his former students due to some bureaucratic bullshit and his low ranking excludes him from having a say so he climbs the hierarchy to ensure they are treated well. Either way, it will NOT be because he suddenly sees his current life as problematic and suddenly become ambitious. It will be in an effort to help people he cares about since otherwise he couldn't be bothered.

What does he gain from picking a fight with every random person who wants to talk shit behind his back? Dudes secure enough in himself that he doesnt give a shit about random people in the street, we should all aspire to that
