I think the implication of the last page is that the dolls would get angry if she became a doll (mentioned on a previous page)

I got the impression the dolls were basically acting as scale models of the dresses she's selling, and since it's set up in a shop for rich people she could assume the dolls wouldn't get totally obliterated by random people touching them. A bit of a surprise to me too though
