Anyone who thinks scanlators care about "pushing some agenda" is just a snowflake crybaby, who will whine at the mere mention of anything he doesn't like. It's little wonder he'd be such a "lovely" person to be around in general, but that's part of the package and therefore worth pointing out. Especially since you've been too generous to imply that he's articulate enough to put it this way. If hev were, he wouldn't use meaningless terms.

While you do, how about listing "all the examples we've seen over the years" in a way that can be teaced back? Or are you going to pull the "do your own research" card? It's always the same with you crybabies...

There's an implication here of the dog being some sort of leftover hatred towards being cheated out of their money by the store owner, considering she's allergic to dogs.
Given that the world seems to be full of grotesque monsters no matter where you look and they're all doing their own thing, I don't think there's much basis for such context. Sure, the thing might have it out for her for various reasons or it might just be causing trouble on principle (it did prevent Miko from just leaving, which from a practical sense, would cause as much harm to the storekeeper as exposing her trick). The series seems to keep the supernatural entieties as independent from human emotions though.

Afaik there's nothing on 6 legged dog. But there is a curse that use dog by burying it up to its neck then starve it. But that curse appearance is severed dog head. So it's most likely just a random creature that stay in the shop
That's supposed to be one method of creating an Inugami in order to deliver vengence for some slight. The point being to put food in front of it and tell it that it's suffering is nothing compared to the owner's, so it should help him get revenge. Yeah, and they say contemporary people are self absorbed, right?

It's read as "Hitoe" (among others) in nanori (name readings of kanji). It's the shopkeeper's name.

仁 contains 亻, the 人偏 ('ninben', or 'person radical'), so it can be read as "hito", or "nin".
江 is commonly read as "e" in kunyomi. The same character is used in Chinese, which is where the katakana エ originated from.

Read as "Nie", meaning "benevolent bay", it's also the name of a beach in Suzu, a city in the north of Ishikawa prefecture. Not like that is relevant though.
